This is a wine made using Shine Muscat grapes from Mr. Kawasaki, a grape farmer in Gojō City, Nara Prefecture.
In the Shine Muscat of 2023, about 10% is blended with the same Shine Muscat from 2022. The former has less acidity, while the latter is crafted to have more acidity.
Shine Muscat, which is difficult to make into wine due to its low acidity, has been given a good balance of acidity that can be felt on the palate by separating a lot with volatile acidity and blending it at the end.
The use of super ripe grapes, which have also turned yellow in color, has enhanced the richness of the aroma.
A small amount of sulfur dioxide is used before fermentation and before bottling.
Aromas of muscat, lychee and citrus.
It has a refreshing and juicy acidity that makes it easy to imagine enjoying it casually with meals at bars and similar places. It will surely pair well with sushi as well.
