Destemmed and crushed, then fermented after cold maceration. Primary fermentation in resin tanks at a slightly low temperature. Pressed before fermentation completes, then finished in stainless steel tanks. After primary fermentation, transferred to French oak barrels (new or second-use) for malolactic fermentation. Bottled after 10 months of barrel aging.
Aroma of coffee, raspberry, cherry, spices, herbs, earth, and forest.
A subtle sweetness that comes from natural yeast fermentation.
It expresses the characteristic of Japanese wine that is as smooth as water yet full-bodied.
