Mr. Yano is probably the only farmer in Yamanashi specializing exclusively in grapes for winemaking.
In other words, he does not own a winery and does not grow table grapes.
A farmer who specializes in growing grapes exclusively for wineries.
Mr. Yano, such an eccentric, and Mr. Kitani got along well and have been supplying grapes since 2023.
In this year, a luxurious pressing of 60% juice extraction. The flavor is tightly sealed by six long-term low-temperature fermentations with wild yeast, then transferred to barrels in the latter half of fermentation for over six months of aging before bottling.
Aromatic scents like muscat, lime, lemon peel, white flowers, white peach, green apple, yogurt, candy-like aroma, ginjo fragrance, woody barrel notes, smoky, and toast.
A scent that gently tickles the nostrils with a long, gentle finish.
A high-quality wine with moderate acidity and a good balance.
It is already delicious now, but it is expected to blossom even more after about one more year of harmonizing with the barrel.
