This white wine uses grapes planted in 2018 in Tenri City, Nara Prefecture. It is cultivated organically.
① Monde Brille and ② Sauvignon Blanc + Pinot Gris are pressed separately and fermented in stainless steel tanks.
Fermented at a low temperature of 6°C. Before fermentation is complete, Monde Brille is transferred to barrels for aging. Before bottling, Monde Brille from the barrels is blended with Sauvignon Blanc and Pinot Gris. The blend ratio is approximately 80% Monde Brille, 9% Sauvignon Blanc, 9% Pinot Gris, and 2% others. A slight amount of volatile acidity, perceived positively, spreads a juicy umami flavor throughout the mouth. Aromas of white peach, muscat, refreshing herbs, and oak from barrels without roasting.
