Musashi Winery / Ogawa Yama Sauvignon Blanc de Noirs 2022 (White) 750ml

Whole clusters were pressed without destemming, using gentle pressure to extract juice without much color from the skins. Fermentation lasted 123 days at around 9°C, and about half of the wine still fermenting was bottled as Jugemu, then continued aging sur lie in stainless steel tanks for about 4 months, followed by two racking processes before bottling.

As before, for this batch as well, no substances other than grapes were used, and it was finished unfiltered and unclarified.

Impressions of quince, pear, orange, and black tea, with a long-lasting mellow acidity in the finish.

At first, it shines with a golden white, then in the latter half, it gains a slight reddish hue and richness, resulting in an enjoyable Brand Noir with delightful changes.
