Whole clusters were pressed without destemming, using gentle pressure to extract juice without imparting much color from the skins. Fermentation took place at around 9°C for 123 days. About half of the wine still undergoing fermentation was bottled as Jugemu, then aged sur lie in stainless steel tanks for about 4 months, and bottled after two racking processes.
As before, no substances other than grapes were used in this batch; it was finished unfiltered and unfined.
Notes of quince, pear, orange, and black tea, with a long, smooth acidity lingering on the finish.
At first, a white wine shining with a golden hue, it develops a slightly reddish tint and richer flavor in the latter half, creating an enjoyable evolution in this Brand Noir.
