
Setouchi Brewery / Mihara Sauvignon Blanc Semillon 2023 (White) 750ml
Regular price ¥4,400The vineyard is "Mihara's Small Vineyard Buttsuji Grape Rocto." Sharing the vision of Setouchi Brewery, they agreed to cultivate wine grapes for us, starting with 500 vine seedlings. The vineyard owner is Mr. Tou, a young producer. While he has experience with table grapes, this is his first time growing wine grape varieties. He carefully cultivates them through trial and error. Within the Rocto table grape vineyard, there is a dedicated contract cultivation plot for Setouchi Brewery grapes. This wine is a "field blend" made exclusively from grapes grown in that plot.
The harvest was carefully waited until just before the acidity dropped, allowing the grapes to ripen on the vine. Producers and Setouchi Brewery staff handpicked the grapes with careful sorting in the vineyard before bringing them to the winery. They then manually sorted and destemmed the grapes, starting fermentation with free-run juice and gently pressed juice at appropriate pressure. The 2023 vintage impresses with a refreshing character that highlights the personality of Sauvignon Blanc. The lingering finish reveals the rich fruitiness of Semillon. The texture is luscious and honey-like, with the flavor preserved as is. To retain the fruitiness of the grapes, the wine was finished with light filtration. This is a white wine nurtured by the Setouchi sun.
