This is a sparkling wine made by Yokomachi Père et fils in Miyoshi City, Hiroshima Prefecture, using Sauvignon Blanc, with secondary fermentation in the bottle. After destemming and crushing, the juice was pressed and underwent primary fermentation at low temperature, then bottled for secondary fermentation and aged in the bottle for 15 months. It was then riddled (to settle the lees), disgorged (to remove the lees), and dosed (to adjust sweetness). No sugar was added during dosage, resulting in an Extra Brut finish.
Herbal aroma typical of Sauvignon Blanc, refreshing notes like grapefruit, and the fruity character of grapes from the fortunate 2020 vintage.
