Regular Price ¥2,200Curious means "full of curiosity" and is a wine that embodies the concepts and ideals held by each producer, aggregating their individual experiences and knowledge to create it.
The wine undergoes fermentation at low temperatures (fermenting the skins and seeds soaked in the juice), slowly extracting pigments and aromatic components from the skins and tannins from the seeds. After fermentation is complete, it is immediately transferred to barrels, where the wine is aged on the lees. This beautifully brings out subtle notes of vanilla, toasted aromas, and umami from the yeast (barrel aging). This is a style of wine known as "orange wine."
The aroma is dominated by citrus notes reminiscent of grapefruit, enveloped in sweet and floral nuances of apricot and honey, leading to a smooth mouthfeel. The rich structure and moderate tannins harmonize beautifully, allowing you to enjoy a satisfying finish. This wine is made from Koshu grapes grown in Katsunuma Town.
