
Soryu Wine / Curious Type OR 2021 (Orange)
Regular Price ¥2,200Curious (キュリアス) means "full of curiosity," and this wine is brewed by aggregating the individual experiences and knowledge of each winemaker to embody their concepts and ideals.
Fermentation is carried out at low temperature with maceration (fermenting the juice with skins and seeds), slowly extracting pigments and aroma components from the skins and tannins from the seeds. After fermentation is complete, the wine is immediately transferred to barrels and aged on lees. It beautifully brings out subtle vanilla and toast aromas and yeast-derived umami (barrel aging). This is a style of wine known as "orange wine."
The aroma is mainly citrus reminiscent of grapefruit, wrapped in sweet and floral nuances such as apricot and honey, leading to a smooth mouthfeel. A rich structure and moderate tannins harmonize well, allowing you to enjoy a satisfying finish. Made with Koshu grapes from Katsunuma Town.
