This Chardonnay is harvested in Tsuruta Town, where the grapes are sorted and hand-destemmed at the vineyard and winery, then fermented with natural yeast. It then undergoes malolactic fermentation (MLF). After MLF, the wine is left undisturbed in the tank without racking. The lees from healthy grapes are clean and add depth of flavor, and continuous contact between the lees and the wine enhances its umami.
