After harvesting Sauvignon Blanc from Tsuruta Town, careful sorting is done in the vineyard and winery, and the hand-destemmed grapes are fermented with natural yeast. Then it transitions to malolactic fermentation.
Repeated batonnage (stirring the wine after fermentation) once every 7 to 10 days, with about 4 months of tank aging. Bottled unfiltered with low sulfur dioxide when the black tea-like aroma appears.

Pale golden yellow color, aroma of white flowers, scent like navel orange, with a subtle hint of black tea.
In addition to citrus fruits, it has flavors reminiscent of loquat and Japanese pear, with fine acidity and a mineral sensation that adds depth to the taste. The astringency, like the core of a Japanese pear, lingers through the finish.
