We made it from 100% Delaware grapes grown without pesticide application (no Bordeaux or sulfur compounds) at the Kinzan farm located in Nanyang City, which is characterized by thick-skinned Delaware.
This is Delaware grapes that were covered with vinyl in spring and grown with sufficient airflow in Nanyo City. The grapes were alternately crushed and stacked in the tank, with the top of the tank sealed tightly with vinyl, and underwent 40 days of carbonic maceration (M C), allowing for natural fermentation without any intervention. After that, the juice was pressed, and secondary fermentation in the bottle was carried out after the final fermentation was completed.
With an alcohol content of 12%, the refreshing bitterness of citrus bursts forth with a bubbly sensation, allowing you to enjoy a robust "lightly sparkling wine."
I think the 2022 vintage will allow you to enjoy the lingering bitter fruit sensation in the aftertaste. Of course, even if the effervescence decreases, it can still be enjoyed as a still wine. I hope you can enjoy this sensation now, as well as after aging.
