Yellow Magic Winery / Ashid Dela 2023 (Orange) 750ml

This was made from 100% Delaware grapes cultivated without pesticide application (including Bordeaux and sulfur compounds) in the Nanyang City Jinshan area. The Delaware grapes were covered with plastic in spring and grown with ample airflow from Nanyang City. To bring out the characteristic thick skin of the Delaware, the grapes were crushed by foot in the tank without destemming, followed by manual stirring every two days, ensuring that the fermentation sensation was not too strong, and produced through 50 days of semi-carbonic maceration (SemiMC).

In particular, the Delaware, which is the raw material for this wine, has very thick skins, and from those skins, you can feel the distinctive aromas of "plum" and "ume," which are expressed directly in the taste of the wine. The color is also quite plum-like, and the bitterness from the stems tightens the flavor. It can be enjoyed now, but I think it will also be delicious if aged to bring out the overall maturity.
