Regular price ¥3,850In 2017, a new project started in the Akayu wine region. This wine is based on the concept of "Bottling the VINEYARD" — bottling the vineyard itself.
The heartbeat of the earth, the heartbeat of the grape growers, the heartbeat of the winemakers, the heartbeat of those introducing this wine, and the heartbeat of those drinking it. I believe the region is shaped by all these heartbeats. From the only "Koshu" vineyard in Akayu, Yamagata (Nanyo City), the grapes were destemmed and crushed, then left in skin contact for 48 hours before pressing.
Without racking, two 3-year-old French oak barrels (treated with sulfur roasting for wood preservation), two 4-year-old French oak barrels (also sulfur roasted for preservation), and the remaining juice naturally fermented at low temperature in stainless steel tanks. Overall barrel to stainless steel ratio is 4:1.
During and after fermentation in oak, no bâtonnage (stirring) was done to retain the carbon dioxide produced during fermentation.
In 2024, to preserve the delicate and fine acidity characteristic of Koshu from Akayu, the balance between the soft texture unique to French oak fermentation and the acidity will pair well with various dishes.
It can be aged for 5 to 10 years, but I believe you can also enjoy its flavor while it’s fresh.
This is the only wine from Yellow Magic Winery that explicitly states the use of antioxidants, but aside from sulfur roasting of the oak, no sulfites are used in this wine.
