Merlot contract-grown in Kamiyama City was not saignée (bleeding), underwent 90 days of low-temperature maceration, then matured for 1 year and 6 months without sulfites in French oak and stainless steel tanks respectively.
Thanks to low-temperature maceration, you can enjoy sufficient fruitiness and smoothness, a well-balanced oak aroma, and the delicate acidity typical of Yamagata.
You can feel the power of these grapes in a liquid that has lasted 1 year and 6 months without relying on sulfites.
It wasn't aimed at natural wine, but in Japan, winemakers called natural or nature tend to dislike French oak, yet seeing wonderful overseas natural wines using oak,
I thought it was important to skillfully incorporate classical elements, so I created a Japanese-style oak nature.
With the image of "OLD SCHOOL" in HIPHOP.
Unfortunately, this Kamiyama Merlot is no longer available, but I hope to reflect this style image in future winemaking.
I think it has become a wine I really like myself.
