Yellow Magic Winery / R&B 2023 (White Sparkling) 750ml

This is a fusion wine of "apple" and "grape" made from Fuji apples and Pink Delaware (at a timing when it has a bit more color than green Delaware) from Nanyo, Yamagata Prefecture. In other words, it is "Rhythm and Blues" and "Apple and Grape."
Apple juice slowly pressed with an apple juicer was fermented at low temperature for three months without racking, then pink Delaware wine turned brewed orange, preserved without sulfites at the end, was added, and secondary fermentation was done in the bottle.
The color, a feature of being free of sulfites, is remarkable with the ripe deep yellow of the apple wrapped in the brewed orange.
The taste has the characteristic apple flavor of cider and the finesse of the acidity from the moderate "Pink Delaware," so I think it pairs well with various dishes.
The carbonation is moderate, but the finely dissolved bubbles make the apple flavor stronger from the second glass onward. And the core of "Pink Delaware" keeps it from becoming dull, delivering a deliciousness that never gets boring until the end.
This fusion wine of "apple" and "grape" is a wine I wanted to make because I wanted to practice it here in Yamagata Prefecture, the production area of "apple (3rd nationwide)" and "apple (3rd nationwide)".
I have always thought that if grape wine could compensate for the parts lacking in "apple," which has a low alcohol content and does not easily show acidity, it would become a more enjoyable wine.
As the name "R&B" suggests, please enjoy the "pleasant rhythm of a smooth throat" and the "heart's shout saying 'delicious'".
