By fully receiving the brilliant sun of 2023, the taste became a contrast to 2022. Harvest started earlier than ever on 9/13. From the plots harvested afterward, many fully ripe Albariño grapes were found, already giving off a ripe aroma from the juice. Four types of base wines with different ripeness levels were fermented separately and finally blended to achieve balance. With an acidity level never seen before, it is generally necessary to add acid, but with our pride of "not forcibly seeking what is not in the VT," we do not add acid at all. There may be some ego in trying to approach the ideal image of the winemaker... but we are relieved to have expressed the characteristic "extreme heat" of the 2023 VT.
