Regular Price ¥4,180Using sandy soil Cabernet Sauvignon from our own vineyard, we aimed to create a charming yet somewhat mysterious and gently penetrating flavor.
There are four brewing methods: whole bunch, carbonic maceration, cold maceration, and a special method that activates lactic acid bacteria before fermentation. Each was brewed in separate tanks and combined at pressing.
The scorching heat and drought of 2023 brought wonderful flavors to the red wine varieties.
Seeing the healthy, small, and concentrated grapes like never before, I couldn't help but make 【Kuma】 again after a long time to create a flavor to my liking.
It actively produces substances called off-flavors, which is thrilling, but for those who like it, it's an irresistible taste.
The nuance of MC, the greenness of the whole bunch, the reduction's blackness, the floral acetic acid, the faintly sexy Brett, and the varietal character. Various elements intertwine, spreading aroma from the glass to the mouth. Then the finish gradually expands.
Of course, I like all the wines I make myself, but meeting 【Kuma】 again for the first time since 2020 really excites my heart.
