
Cave d'Occhi / Flamingo (Pinot Noir) 2023 (Red) 750ml
Regular price ¥4,950Made using Pinot Noir vines over 20 years old from our own vineyard, this wine was crafted to offer a gentle flavor that seeps into the body.
2023 was an excellent year for early-ripening red varieties, with no rain from late July to mid-September. The grapes were the darkest we have ever seen, with almost no signs of disease, resulting in the best condition.
On the other hand, it was a year with warm nights and low acidity levels. To compensate, we gently stirred lactic acid bacteria before fermentation to add lingering acidity and a subtle depth of flavor.
From the glass, aromas of raspberry, violet, leaf mold, and tanned leather emerge,a vibrant scent unique to sandy soils.
On the palate, it is full-bodied and soft, with umami that gradually spreads.
Though still young, it shows many promising qualities for the future.
Immediately after opening, it has a slightly reductive character with hints of iron and gunpowder, giving a firm impression, but this actually serves as a good accent for this wine.
It softens and becomes smoother over time, so we hope you enjoy it slowly.
