Regular Price ¥4,950We used Pinot Noir from our own vineyard with over 20 years of age, aiming for a gentle flavor that seeps into the body.
2023 was an excellent year for early-ripening red varieties, with no rain from the end of July to mid-September. The grapes were the darkest I have ever seen, in the best condition with hardly any signs of disease.
On the other hand, it was also a year when nighttime temperatures did not drop, resulting in low acidity. To compensate for this, we lightly stirred lactic acid bacteria before fermentation to add lingering acidity and a subtle flavor.
The glass overflows with vibrant aromas unique to sandy soils, such as raspberry, violet, leaf mold, and tanned leather.
On the palate, it is rich and soft, with a gradually expanding umami.
Although still young, it has many elements that make one look forward to its future.
Right after opening, it has a slightly reductive quality with a metallic and gunpowder-like sensation, giving a firm impression, but this actually serves as a good accent for this wine.
As time goes on, it becomes softer and smoother, so I hope you can enjoy it slowly.
