
Cave d'Occhi / Flamingo (Pinot Noir) 2024 (Red) 750ml
Regular price ¥4,950Made using Pinot Noir vines over 20 years old from our own vineyard, aiming for a gentle flavor that seeps into the body.
Although July saw heavy rainfall in 2024, the weather was favorable during the harvest period in August for this variety.
Carefully harvested grapes were cooled overnight, destemmed at 13°C, and transferred to the fermentation tank. Simultaneously, half the amount of stems was returned to the tank.
As a result, half of the batch was fermented with whole clusters.
For the following three days, fermentation was halted while performing remontage, and pre-cultured natural yeast was added.
Extraction during fermentation was kept minimal, with manual punch-downs once or zero times per day, and pressing was done on the ninth day after starting.
Aging was done in old French oak barrels.
From the glass, a vibrant red fragrance overflows, layered with scents of violet, leaf mold, and tanned leather.
The added stem-derived spiciness acts as an accent, creating a complex aroma.
It feels smooth and soft on the palate, with gradually spreading umami.
Although still young, this wine is crafted with many promising qualities for the future.
