Using Chenin Blanc from our own farm as the raw material, we aimed to create a gentle flavor that seeps into the body.
2023 was an unusual year with only 3mm of rainfall from mid-July until the harvest of this variety.As a result, the winemaking process was completely different from usual with these grapes.
That said, the basic brewing of honey involves a 3-day skin contact during which it acquires nuances of acetic acid, following the usual method.Perhaps the only difference is that we are challenging ourselves with natural yeast. After barrel fermentation and aging, we bottled it in April. It might be the best we've ever made.
The first impression is of ripe fruit and a honey-like sensation, with nuances of small white flowers.When you take a sip, a syrupy and sweet liquid spreads over your tongue, followed by notes of vanilla and nuts from the barrel.
The aftertaste seems to gradually seep in with bitterness and umami.
As the age of the trees increases, the yield has been decreasing in inverse proportion, and while we used to be able to produce 3 barrels, recently we have barely managed to produce 2 barrels.
It's a variety I love, but there are many cultivation issues, so I haven't been able to expand the fields.
Please enjoy the liquid without chilling it too much, so you can appreciate its qualities.
