Cave de Dodicci / Yamadori Tobi (Labrusca) 2023 (Rosé Sparkling) 750ml
Regular price ¥3,520Based on Steuben from the Tohoku region, it was made by blending Campbell and Delaware grapes.
Since each grape variety has a strong character, we deliberately did not make it single-varietal, but combined the strengths and weaknesses of each to achieve the desired flavor.
The gas pressure is set at 3.5 atmospheres. True to its name "Tobu" (Fly), it has a strong and firm carbonation.
To approach the vivid red color of the actual copper pheasant, we also performed disgorging to create a clear liquid.
The top notes are pink grapefruit and strawberry aromas. When you take a sip, a soft-textured liquid spreads along with fine bubbles.
Although it is sparkling, this wine remains enjoyable even after the bubbles have faded, so please try drinking it over several days.
