
Cave d'Occhi / Paulownia and Phoenix Pinot Noir 2023 (Red) 750ml
Regular price ¥4,400This is Pinot Noir from our own vineyard. The 26-year-old vines planted since the founding are fully destemmed and fermented with natural yeast, then aged for 9 months in old barrels. No sulfur dioxide was used until bottling.
From 2023, Cave d'Occhi has been experimenting with natural yeast, and one barrel fermented with natural yeast showed exceptional character during barrel aging, so it was bottled separately.
The texture achieved is thanks to the intense heat and drought of the vintage, fully expressing the unique charm of natural-style Pinot Noir.
Aroma wrapped in natural umami with wild strawberries, violets, black cherries, roses, a calm sunny forest, and gamey nuances. On the palate, intense umami and sweetness combine with pure fruit flavors, balanced by enough saltiness, extending deeply and long into the throat.
This wine delivers a powerful impact right from opening, but perhaps due to the nature of this method, it shows signs of fading after about three hours and becomes fragile by the next day. I understand this is a difficult request, but I strongly recommend drinking it by the bottle.
Until now, I have made my wines with zero sulfur dioxide, but frustrated by the instability, I added a very small amount of sulfur dioxide at bottling in 2024.
This will likely be the first and last wine I make using Pinot Noir from our own vineyard.
