
Cave d'Occhi / A Drink at Hanami Rose SP 2024 (Rosé Sparkling) 750ml
Regular price ¥3,520A rosé sparkling wine made from a blend of Merlot and Chardonnay.
Merlot and Chardonnay were destemmed and crushed, then cold-macerated for two days. After pressing, fermentation was done with natural yeast, and primary fermentation took place in the bottle using the ancestral method. Bottled at a specific gravity of 1.008 aiming for slight residual sugar. No sulfur dioxide was used until bottling.
Bottled on October 22, 2024, disgorged on February 19, 2025. It has nearly 6 atmospheres of pressure, but if kept upright and well chilled, it will not gush. (Please be cautious, though.)
A faintly sweet residual sugar sensation and crisp, fine bubbles, combined with a slight green and bitter note from the Merlot, come together in a wonderful balance.
Rose, cotton candy, melon, and dill create a vibrant aroma, and when you take a sip, the fine bubbles expand gracefully, spreading the juicy sweetness of the fruit throughout your mouth.
The elegant finish and crisp bubbles, with just a hint of bitterness, are pleasantly fleeting, making you reach for another sip, and then another.
At the time of release, it is slightly reductive when first opened. However, I think it is a positive reduction rather than an unpleasant one.
You can enjoy a crisp texture even as it is now while it is still reductive, but if you wait a few months, I believe it will blossom into a wine overflowing with fruit.
