The reason Nagano Prefecture is considered suitable for wine grape cultivation is due to its surrounding mountain ranges, which result in low rainfall. Among them, the Northern Alps, stretching north to south along the border with Gifu Prefecture, consist of mountains over 3000 meters high and act as a barrier blocking moist air and rain clouds coming from the west. The Northern Alps, beloved by climbers and skiers, are also known as the Hida Mountains, named after a flying horse. We named our carefully crafted wine from grapes grown in Ikeda Town, Azumino, and Shiojiri—some of Japan's top grape-growing regions influenced mainly by the Northern Alps—"Pegasus Hills" in respect to the Hida Mountains.
The 2024 vintage underwent a low-temperature mash for 5 days before fermentation, followed by fermentation at temperatures above 30°C. The must was stirred 2 to 3 times a day to extract color and flavor. After aging for 6 months in old French oak barrels and stainless steel tanks, the wine was blended and bottled. It features rich fruit flavors that can be enjoyed early, while the barrel aging imparts a spicy aroma that adds complexity and softness. This wine pairs well with various dishes and will mature over 5 years.
