The ingredients are Steuben from Yamagata Prefecture and Yama Sauvignon from Iwate Prefecture. The Steuben grapes were destemmed and underwent 12 to 14 days of skin fermentation in an amphora.
After pressing, it was returned to an amphora for 6 months and blended with Yama Sauvignon in spring 2021.
This red wine combines the juiciness derived from Steuben with the firm acidity from the mountain grape variety, creating a pleasant taste with a compact finish.
