100% of the grapes used are from the Nitta area of Nanyo City, Yamagata Prefecture, where GRAPE REPUBLIC is located. The grapes are organically grown without the use of pesticides other than Bordeaux mixture, and without fertilizers or compost.
Using two amphorae, one with acid, we placed whole bunches of high-ripeness, thick-skinned Delaware grapes into the amphora for about 40 days of skin fermentation.
The other one is skin fermented Delaware that has been fully de-stemmed for 15 days in an amphora.
Aged for about 9 months in amphora. Fermented with wild yeast, unclarified, unfiltered, and no added preservatives.
