Made with 100% grapes from Nitta, Nanyo City, Yamagata Prefecture, where GRAPE REPUBLIC is located. Grapes are grown organically without fertilizers or compost and sprayed only with Bordeaux mixture, no other pesticides.
Using two amphorae: one contains whole clusters of Delaware grapes with high acidity and ripeness and thick skins, undergoing skin fermentation for about 40 days.
Another batch is made by destemming Delaware grapes and skin fermenting in amphorae for 15 days.
Aged for about 9 months in amphorae. Fermented with wild yeast, unclarified, unfiltered, and no added antioxidants.
