Using Delaware grapes from our own farm in Nanyo City, Yamagata Prefecture. The grapes are organically grown without the use of pesticides other than Bordeaux mixture, and without fertilizers or compost. Two amphorae are used: one undergoes fermentation and aging in the amphora after 24 hours of skin contact, while the other ferments the destemmed Delaware grapes on the skins for 15 days and then ages in the amphora. After approximately 9 months of aging, it is bottled. Fermentation is done with wild yeast, and it is unclarified, unfiltered, and contains no added preservatives.
