Using 100% carefully selected Koshu from our vineyard in Katsunuma, the juice is fermented with skins and seeds together in the tank just like red wine, without added antioxidants, fermented with wild yeast, unfiltered, and aged in French oak barrels.
In the terraced fields of the Shimo Iwasaki and Todoroki Hikawa areas, no insecticides are used; pests are removed manually.
Managed only with pesticides such as lime sulfur and Bordeaux mixture. The fermentation temperature is left to nature, fermenting for 11 days, then pressed and aged for about 11 months in French oak barrels and stainless steel tanks.
