Made with 100% Muscat Bailey A from our farm in Katsunuma, fermented with wild yeast without added preservatives, and finished unfiltered.
Harvested at a sugar content of Brix 17.5 to 18 from trellised fields in the Hishiyama and Torii-daira hill areas.
A small amount of sugar was added to balance the wine. The fermentation temperature was left to nature, and after 12 days of maceration, the juice was pressed. It was aged in stainless steel tanks for 6 months.
