Sanmamoru Winery / Pinot Noir Classic 2021 (Red) 750ml

A medium-bodied red wine made from Pinot Noir grown in our own vineyard located in Mutsu City, Aomori Prefecture.
In 2021, our vineyard experienced higher sunlight hours and average temperatures than usual, along with less rainfall, resulting in favorable weather conditions. Not only did we achieve a yield greater than in previous years, but we also produced high-quality grapes with a well-balanced combination of very high sugar content and acidity that stands up to it.
The harvested grapes not only yielded more than in previous years, but they also became high-quality grapes with a balanced combination of very high sugar content and acidity that is equally impressive.
The harvested Pinot Noir undergoes a low-temperature maceration for about 5 days, and the fermentation period lasts for 14 days.
During that extraction process, we envisioned "nimono" and strictly managed the temperature and liquid circulation to prevent any off-flavors from being extracted into the liquid.
After fermentation is complete, separate into free run and press run for MLF, and age the free run in barrels and the press run in stainless steel tanks for 2 years.
The overall ratio is blended with 60% barrel-aged wine and 40% stainless steel tank-aged wine, and bottled unfiltered.
A clean aroma that well expresses the characteristic scents of Pinot Noir, such as strawberry, raspberry, blueberry, and cherry, with a slight hint of earthy aromas from aging, complemented by the fragrance of French oak, resulting in a complex bouquet.
The acidity is slightly lower compared to previous years, but it has a very clean acidity that enhances the richness of the flavor.
The solid color and slightly strong tannins symbolize the blessing of good weather, suggesting a high potential for aging, and combined with the aroma of French oak, it results in a classical Pinot Noir.
