The wine from Jean Clair is generally a wine with a solid acidity. From the moment it is opened until the first day, you can feel the fresh fruitiness and firm acidity. Around the 3rd to 5th day after opening, the wine becomes mellow, with rich aromas, and the acidity and tannins blend together, resulting in a more abundant flavor. There are individual differences, but it can be enjoyed for about a week.

Also, we recommend dishes that pair well with wine that has been opened for about 4 to 5 days. Generally, rather than the dishes that are said to pair well, red wine seems to go well with yuzu pepper, sansho, and spiced dishes, while rosé and white wines seem to pair well with Japanese herbs.
