During aging, batonnage was performed only in winter by stirring and mixing the lees.
Bottled with no tartrate treatment, no fining agents used, and only coarse filtration.
To ensure that factors other than yeast do not significantly affect the quality, we aimed for the simplest possible production method and endeavored to maximize the individuality of the grapes.
The color tone is the palest and most beautiful lemon yellow. The aroma is somewhat subdued, with a refreshing impression of early mikan, apple, and lemon.
The palate has a sharp acidity, with tannins and bitterness perceived as elegant.
The flavor is full-bodied, and this type of wine will have its aroma and taste qualities most prominently enhanced through bottle aging in the future.
