After destemming and crushing the Merlot grapes, they were placed in a tank, and then the pale pink juice was drawn off into another tank and fermented using the saignée method.
The pressed juice was slowly fermented at a low temperature of about 14-16°C after debourbage, using the clarified juice in stages to create a more fruity finish. After fermentation in stainless steel tanks, the lees containing fibrous material and tartrate in the wine were removed, and the wine was bottled while retaining a pleasant level of carbon dioxide.
