Domaine Shoo / Jolly Jolly Holiday 2023 (Orange) 750ml

Ripe Delaware grapes (only destemmed & whole cluster) layered and fermented.
In 2023, it was also fermented for a full year.
After pressing, it undergoes secondary fermentation in stainless steel tanks, bottled without fining or filtration.

It’s a beautiful orange-colored wine with a faint sweet Delaware grape aroma.
There’s a faint toasty atmosphere, with notes of Yubari melon, apricot, and banana. It raises expectations.
There’s almost no phenol or acetic acid aroma. It’s clean. (Compared to our other products, lol)
The flavor characteristic is "rich umami!" It’s like drinking clam broth soup.
Maybe it has a lot of succinic acid. The umami stretches out, inviting you to take another sip.
Additionally, subtle bitterness and astringency from fermentation add complexity to the flavor.

2023 was a year of intense heat with little rain.
You can sense caramel and other toasty dessert-like nuances.
It's like a finished dessert! The acidity I was worried about remains clean and well-balanced.
Easy to drink, yet with a solid, satisfying body.
It turned out to be quite an impressive liquid.

In the Domaine Shoo's four-quadrant classification, it falls into the third quadrant: wild×deep.
It's a neutral-leaning wild×deep style.

It’s fine to serve it cold or warm. Enjoy it however you prefer.
This one is always released with the thought, "I want it to go well with sweetfish."
From early spring, with mountain vegetables, squid, and shellfish, then from early summer, it's all about sweetfish!
This is also a bottle you'd want to bring to a sushi restaurant.
