Using 100% Koshu from Yamanashi Prefecture, we carefully performed batonnage during barrel aging and made sure to enhance the umami.
Notes of roasted nuts, a refreshing citrus aroma reminiscent of pink grapefruit, a palate rich in fruitiness with a good balance of refreshing acidity and umami, and a pleasant finish that lingers.
