Using Verdelet from the Hosoya area of Kaminoyama City, Yamagata Prefecture, skin contact is performed to bring out the umami of the skin. It is a dry petillant characterized by refreshing aromas of green apple and citrus, and a sharp, rich acidity. We recommend starting by tasting the clear supernatant part, and gradually mixing in the lees as you drink. The flavor changes depending on the amount of lees mixed in.
