We harvested Sauvignon Blanc grown in-house in Ota Saiwai-cho, Miyoshi City, and carried out the winemaking process.
The harvest was divided into three weeks, and different lots for aroma and body were fermented with four different types of yeast to balance fragrance and flavor.
Depending on the temperature, you can sense Japanese herbs like boxwood, as well as citrus, melon, and pear fruits.
You can taste the characteristic acidity of Sauvignon, making it a food-friendly wine that pairs well with Japanese cuisine.
