Mainly using Delaware, with the outstandingly fragrant Niagara and the rich Steuben.
After harvest, cooled in a dark place for more than one day to remove heat, crushed by cluster, and fermented with skins and stems together in a low-temperature brewing room for three weeks.
Then pressed with a balloon press for juice extraction and fermented for another two weeks. No antioxidants used, unfiltered.
