Chardonnay grapes were harvested early to emphasize acidity and gently pressed whole cluster under low pressure.
After fermentation in small oak barrels, it was aged for five months with batonnage.
After that, it was bottled for secondary fermentation in the bottle, with disgorgement scheduled for August 2025.
The 2023 vintage is a 100% Chardonnay BLANC DE BLANCS, a sparkling wine rich in flavor with citrus fruit and vanilla aromas, soft bubbles, and a refreshing acidity.
