The year 2021 was marked by an early spring, a summer with consecutive hot days, a cool period during the Obon festival, and a calm, fine autumn.
In Chardonnay, a high level of ripeness was widely observed throughout the village. As we toured the vineyards weekly to decide the harvest date and tasted the grapes, we were surprised and delighted to find that in many vineyards the seeds were more fully ripened than usual, filling us with excitement and anticipation. The wine made from grapes that matured fully while maintaining acidity, thanks to cool mornings and evenings and sunny days. It offers a rich flavor with concentrated fruit notes like apple and lemon, and a crisp acidity that tightens the palate.
