The year 2023 was marked by a long, hot, and dry summer. Although some vineyards experienced severe water stress, overall, the Sauvignon Blanc benefited from low rainfall, resulting in high grape health.
During winemaking, some grapes undergo skin and juice maceration before fermentation. After cooling and leaving it overnight, when checking the next morning, the cool air in the maceration room and the fresh aromas from the grapes and juice made the morning heat, unusual for September, suddenly disappear.
A refreshing acidity carries the pleasant aromas of lime, lemon peel, and herbs that spread delightfully.
