"Field Blend" typically refers to wine made by fermenting multiple grape varieties grown in a single vineyard together.
For this "Field Blend," we treated the entire Takayama Village as a single vineyard and fermented together the 2022 white grapes collected from various vineyards throughout the village, focusing on the varieties with the richest flavors.
In our usual winemaking process, grapes are fermented and aged separately in tanks or barrels for each vineyard plot to create the base wine, which is then blended before bottling. However, with "Field Blend," multiple grape varieties are mixed and fermented together from the start, making it a product with a significantly different production method from our standard series.
