No additives such as sugar supplementation, acid adjustment, or antioxidants were used at all.

In 2023, it was made into a light red wine full of dashi (broth) flavor.

The grapes are this year's excellent quality MBA from Mr. Suzuki in Kaminoyama.

This year, blessed with good weather, we selected fully ripe grapes for harvest.

To make a wine that can be enjoyed lightly, it is finished as a light red wine without long maceration.

While communicating with the producer, we waited until full ripeness for harvest, carefully picking each bunch, then destemmed on the same day while fresh, followed by overnight skin contact before pressing.

As in 2021, after fermentation in an open vat and amphora, it was bottled after about 4 months of barrel aging.
