No additives such as sugar, acid adjustments, or antioxidants were used at all.
In 2023, it was crafted into a light red wine full of umami broth flavors.
The grapes are again from Suzuki-san's MBA vineyard in Kaminoyama, known for its excellent quality.
This year, blessed with good weather, we selected fully ripe grapes for harvest.
To create a wine that can be enjoyed lightly, it was made into a light red wine without extended maceration.
We communicated with the producer and waited until full ripeness to harvest each bunch carefully. After harvesting, destemming was done fresh on the same day, followed by overnight skin contact before pressing.
As in 2021, fermentation was carried out in open vats and amphorae, followed by about 4 months of barrel aging before bottling.
