We cultivate Koshu grapes across five vineyards located in Yamanashi and Shizuoka.
Through sustainable farming that respects the natural environment, we preserve the delicate flavors and aromas unique to this native Japanese grape variety. Harvesting and brewing: Harvest begins around mid-October each year, handpicked when the grapes reach an ideal balance of acidity and fruitiness, and bottled the following spring.
This Fujisan Winery Koshu blends 20% of Koshu grapes harvested in 2021 that were barrel-aged and rested, based on the 2022 Koshu grape harvest. The wine minimizes exposure to oxygen during the brewing process to avoid oxidation of the must and premature aging, maintaining an incredibly fresh taste with a screw cap. It has a light finish with the characteristic slight bitterness and acidity of Koshu grapes, making it a perfect match for everyday Japanese meals.
