We have five vineyards in Yamanashi and Shizuoka, where we cultivate the Koshu variety.
Through sustainable farming that takes the natural environment into consideration, we preserve the delicate flavors and aromas of this unique indigenous variety from Japan. Harvesting and Brewing: Harvesting typically begins around mid-October each year, when the grapes have reached an appropriate maturity with balanced acidity and fruitiness, and they are hand-picked and bottled in the following spring.
This Fujisan Winery Koshu is based on the 2022 harvest of the Koshu variety, blended with 20% of the Koshu variety that was aged in barrels from the 2021 harvest. The wine minimizes exposure to oxygen during the fermentation process to avoid oxidation of the must and maturation at an immature stage, maintaining an incredibly fresh taste with a screw cap. It has a light finish that expresses the characteristic slight bitterness and acidity of the Koshu variety, making it a perfect match for daily Japanese meals.
