The Yam Sauvignon grape variety is a cross between wild mountain grapes and Cabernet Sauvignon, characterized by a strong, wild flavor derived from the mountain grapes, along with firm acidity and a rich body.
Some of the Yam Sauvignon from Komaki was made using a winemaking method (saignée method) that increases the proportion of grape skins. It has a mild wild character and a rich feel, resulting in an easy-to-drink flavor that pairs well with Japanese, Western, and Chinese dishes alike—a light and approachable wine.
