Remove stems and crush, then start fermentation after low-temperature soaking. Main fermentation occurs in a resin tank at a slightly low temperature. Pressing is done before fermentation is complete, and after the main fermentation is finished in a stainless steel tank, it is transferred to French oak (new barrels or second-use barrels) for malolactic fermentation. Bottling occurs after 10 months of barrel aging.

A subtly sweet nuance that comes later, characteristic of fermentation with natural yeast.
It expresses the characteristic of Japanese wine, being smooth like water while still having a satisfying richness.
