We used seedless Pione, Black Beat, Golby, and seeded Delaware (only free-run). The grapes were provided by a trusted farmer in Habikino.
A fond memory is when Kitani and staff member Daichi harvested 800 kilograms of grapes in the midsummer greenhouse and ended up exhausted (laughs).
Pione and Golby were pressed as whole fruit for white winemaking. Black Beat underwent semi-maceration carbonic fermentation. Delaware was pressed separately into free-run and press-run for white winemaking.
After blending, we completed primary fermentation, racked off the lees, added sugar to create sparkle, and bottled.
We suppressed the rustic notes typical of table grapes by using white winemaking and semi-maceration carbonic methods.
The aroma is like Kyoho grape wine, with strawberry, raspberry, and apple scents.
Low alcohol and lightly sparkling for smooth drinking, with tannins from Black Beat and a satisfying body from seeded Delaware.
In the second year after the winery was completed, we challenged ourselves with affordable wines.
I think it’s great value for the price!
If you uncork it when the temperature is high and sediment is mixed in, it may gush out, so please chill it well and let it stand upright for a while before opening.
