Yokohama Winery / Port Town Masquerade Ball 2021 (Red) 750ml

The grape growers are a couple who moved from Yokohama. On the last day of October, after several frosts, we waited for the sugar content to rise before harvesting. The next day, the farm began preparations for winter, marking the final day of harvest. We are very grateful to the couple for accommodating our unreasonable request to extend the harvest. We were able to make a good Cabernet Sauvignon wine. Because the grapes were in good condition, we fermented with natural yeast and limited the addition of preservatives to a minimal amount to bring out their original quality.

The acidity and astringency are in a good balance. Although the alcohol content is high, it has a solid structure and fruitiness, making it an easy-to-drink red wine. Since it retains freshness, further aging is also recommended. It pairs well with red meats such as beef and lamb.
