The grape growers are a couple who relocated from Yokohama. On the last day of October, after several frosts, they waited for the sugar content to rise before harvesting. The farm began winter preparations the next day, marking the final day of harvest. We are deeply grateful to the couple for accommodating our request to extend the harvest. We were able to make a Cabernet Sauvignon wine of excellent quality. Because the grapes were in good condition, natural yeast fermentation was used to bring out their true character, and only a minimal amount of antioxidant was added.
A well-balanced blend of acidity and astringency. Although the alcohol content is high, it has a solid structure and fruity flavor, making it an easy-to-drink red wine. It retains freshness, so further aging is also recommended. Pairs well with red meats like beef and lamb.
