The grapes were pressed whole without destemming, using gentle pressure to extract juice without much color from the skins. Fermentation took place at around 9°C for 123 days, and about half of the wine during fermentation was bottled as Jugemu. It was then stored in stainless steel tanks on its lees for about 4 months, and after two rackings, it was bottled.
As before, we have finished this preparation without using any substances other than grapes, and it is unfiltered and unclarified.
The impression of pear, orange, and black tea, with a long and mellow acidity that spreads in the aftertaste.
At first, it shines in golden white, and in the latter half, it gains a slight redness and umami, resulting in a delightful transformation into a brand noir.
