Setouchi Brewery / Mihara Sauvignon Blanc Semillon 2023 (White) 750ml
Regular Price ¥4,400The grape cultivation area is "Mihara's Small Vineyard Butsuzunji Grape Rocto." Resonating with the thoughts of Setouchi Brewery, the cultivation of 500 seedlings for wine grapes began, allowing us to grow them. The owner is Mr. Tō, a young producer. While he has experience with table grapes, this is his first time with wine grape varieties. He is carefully cultivating them through trial and error. This is a "field blend" wine made from grapes grown exclusively in the designated area for Setouchi Brewery, located in a corner of Rocto's table grape vineyard.
The harvest waited for the grapes to ripen on the vine just before the acidity dropped. The producers and the staff of the Setouchi Brewery carefully hand-picked the grapes in the field and brought them to the winery. They then destemmed the grapes while selecting them by hand, starting the fermentation with free-run juice and gently pressed juice at appropriate pressure. In 2023, the refreshing character that highlights the individuality of Sauvignon Blanc is impressive. The lingering aftertaste is the rich fruitiness of Semillon. The texture is syrupy like honey, and the flavor remains intact. To preserve the fruitiness of the grapes, it was finished with coarse filtration. This is a white wine nurtured by the sun of Setouchi.
